Strawberry Mousse Cake Recipe:
Step 1:
- Wash the strawberries, remove the stems, and cut them in halves or quarters.

- Cut gelatin leaves into small pieces, soak them in a small bowl containing 30ml of water until softened, then stir to dissolve. You can microwave for about 15 seconds to warm it up for easier dissolution.
Step 2:
- Place a small saucepan on the stove. Add strawberries and granulated sugar and cook over medium heat. Stir until the sugar is completely dissolved, then simmer for about 10 more minutes. The mixture will thicken slightly. Finally, add gelatin water and stir well until dissolved.

- Pour this strawberry mixture into a blender. Blend until smooth, then let it cool.
Step 3:
- Place fresh cream in a large mixing bowl and use a hand mixer or whisk to whip until stiff peaks form.
- Once the strawberry mixture has completely cooled, pour it into the whipped cream mixture. Gently fold everything together until fully incorporated.
- Divide the mixture evenly into individual glass cups, then place them in the refrigerator to set for about 3-4 hours. (After about 1-2 hours when the surface of the cake sets, you can decorate with strawberry slices on top if desired).

Note: Gelatin melts quickly at temperatures above 30°C, so refrigerate this strawberry mousse cake until serving.
