While Sum Villa boasts a plethora of delicious dishes, recently, I've been enchanted by their stir-fried vermicelli with shrimp paste and tender meat. It's not the typical watery broth-soaked noodles, nor is it overloaded with spices like Singaporean or Thai-style stir-fried noodles that I've tried before. This humble stir-fried vermicelli with shrimp paste and tender meat is uniquely rich and aromatic, simultaneously savory, fragrant, and sweet—a delightful culinary surprise!
Every morning, I head to Sum Villa with an unyielding craving. I find myself on a quest to uncover the simple yet unbelievably delicious recipe for this hometown dish, so that whenever the urge strikes, I can dash into the kitchen and whip up a large bowl to satisfy my hunger!

Stir-fried vermicelli with shrimp paste is easy to make, using inexpensive ingredients yet incredibly satisfying to the palate
Preparing ingredients for stir-fried vermicelli with shrimp paste (for 500g of vermicelli):
+ Fresh vermicelli, finely ground beef shoulder, shrimp paste, eggs, chives, shallots, dried garlic
+ Soy sauce, sugar, cooking oil, bouillon cubes, fish sauce,...
Firstly, crack 2 – 3 eggs into a bowl, add about a tablespoon of cornstarch, beat well until dissolved, spread the eggs thinly, then transfer to a separate plate, and finely slice.

The ingredients are very simple
Clean and chop the scallions and dried garlic finely. Heat about 2/3 of the oil until golden and crispy, set aside on a separate plate. Then, with the remaining ½ of the scallions and garlic, sauté until fragrant, then add the ground meat, stir well. When the meat starts to firm up, add a teaspoon of fish sauce, a teaspoon of sugar, and a teaspoon of bouillon cubes, mix well to let the meat absorb the seasoning. Pour about 3 – 5 tablespoons of shrimp paste into the meat pan, stir well until the meat turns a light yellow color, and a fragrant smell arises, then transfer to a separate plate.

Just 4 simple steps!
Sauté the remaining minced scallions and garlic on the non-stick pan, add the fresh vermicelli and quickly stir-fry over high heat. Gradually add the sliced eggs and cooked meat, stir-fry together, season to taste, continue stirring for about 2 more minutes. Finally, add the chopped chives and stir-fry for another minute before turning off the heat.
This dish must be eaten hot to taste its best and avoid dryness. Before eating, sprinkle some golden browned scallions and garlic on top and drizzle some soy sauce over the noodles for a much more fragrant and flavorful experience.
