Step 3: Boil the sweet potatoes
Bring water to a boil in a pot, then reduce heat to simmer and boil the sweet potatoes until completely soft (about 15 minutes). Drain and rinse with cold water for 3 minutes to complete the boiling process.
Step 4: Mash the sweet potatoes

Step 6: Refrigerate and freeze any leftover sweet potato puree
Prepared sweet potato puree can be stored in the refrigerator for 3 days. If freezing the puree, it can be kept for 3 months; when needed, thaw by leaving it overnight in the refrigerator.
