If you prefer not to retain chat content with a specific individual, you can utilize Hangouts' built-in feature. This approach is applicable to users who are registered with Gmail; all content exchanged between two users will vanish once you close the chat window.

Instructions for Preventing Chat Content Storage on Gmail

Step 1: Begin by logging into your Gmail account and opening the chat window within Gmail.

Step 2: Click on the gear icon in the chat window.

Step 3: Finally, uncheck the option for Hangout history/Do not save chat content.
