PREPARATION OF INGREDIENTS FOR QUANG DONG HONEY GLAZED CHICKEN
- 1 whole chicken, about 3kg, head and feet removed
- 1kg potatoes
- A few sprigs of green garlic
- 3-4 pieces of dried tangerine peel
For the marinade:
- 60ml soy sauce, 3 tablespoons Hoisin sauce, 4 cloves minced garlic, 1 tablespoon minced shallots, 2 tablespoons minced fresh ginger, 1½ tablespoons salt, 3 tablespoons Shaoxing wine, 1 teaspoon Chinese five-spice powder.
For the honey glaze:
- ⅓ cup hot water, 2 tablespoons vinegar, 3 tablespoons honey

GUIDE TO MAKING QUANG DONG HONEY GLAZED CHICKEN
Step 1. Prepare the marinade
Make the sauce by mixing the sauce ingredients together. Mix until well combined.


Step 2. Marinate the chicken
Rub the chicken inside out with the sauce, ensuring all surfaces are thoroughly coated. Place the dried tangerine peel inside the chicken cavity along with any remaining sauce.
Place the chicken on a tray, wrap tightly with plastic wrap, and refrigerate overnight. The next day, remove the chicken from the fridge 1 hour before cooking to bring it to room temperature.

Step 3. Prepare the baking tray
When you're ready to cook, line the baking tray with sliced potatoes and minced garlic.

Place the chicken on top, tucking the thighs underneath.

Step 4. Roast the chicken
Roast the chicken in the oven at 220°C for 15 minutes. Then, use a brush to coat the chicken with honey mixture and return it to the baking tray. Roast for an additional 15 minutes.

Take the chicken out of the oven, flip it over. Brush honey onto the chicken. Reduce the oven temperature to 160°C and roast for about 10 more minutes, brushing with honey again. Roast for another 10 minutes until done.

Step 5. Presentation
Transfer the chicken to a plate, cover with aluminum foil, and let it rest for 15 minutes.
Remove the potatoes and garlic from the pan. You can leave them whole or mash them into delicious roasted mashed potatoes (just add milk, butter, and salt to taste).

Strain the vegetable broth from the tray. Serve in a small bowl alongside the chicken.
