Chicken sausages are not only beloved by kids but also by adults. The process of making chicken sausages is simple yet yields a final product that is both delicious and appealing compared to other sausages. Take advantage of your free time to create fresh and tasty chicken sausages for snacking or to pair with cold rice for a convenient and delightful meal. Unlike store-bought sausages, which often contain a lot of fillers and may lack hygiene, homemade chicken sausages have the sweet and fresh taste of meat, making them more flavorful and fragrant. Ingredients:
- 1 tablespoon of finely grated orange zest
- 2 tablespoons of salt
- 1 cup of dried apricots (optional)
- 1/2 cup of port wine (optional)
Delicious 1.8 kg of chicken thigh meat
0.5 kg of premium pork lard
500g of tender pork belly for sausage casing
A blend of dry spices (or substitute with 2 packets of five-spice powder available at the dry goods store, though the aroma may not be as fragrant)
1 teaspoon of whole thyme seeds; 1 long cinnamon stick, about 5cm; 3 cloves; 5 cardamom pods; 6 sprigs of rosemary; 1/2 teaspoon of coriander; 1/2 tablespoon of Egyptian cumin seeds; 1 tablespoon of whole black peppercorns

Note:
+ This recipe can yield approximately 20 15cm-long sausages.
+ If you prefer duck, you can substitute chicken with duck meat to make flavorful grilled duck sausages with five-spice seasoning.
How to make chicken sausages:
Step 1: Prepare the Ingredients
- Clean the chicken thoroughly, remove the skin and bones, and cut into chessboard-sized pieces, about 2.5 cm.
- Wash the pork and cut it into cubes approximately 1.2 cm in size.
- Clean the pork intestines thoroughly with coarse salt, add salt inside to clean thoroughly. This step is crucial as it affects the taste and shelf life of the sausage, so be meticulous.

- Squeeze the intestines until no more yellowish liquid comes out. Then, use a large knife to scrape it along the length until only a thin layer remains.
- Soak the dried apricots in port wine for about 30 minutes.
- Then, scoop out the apricots into another bowl and keep the soaked wine. Put this wine in the refrigerator.
Step 2: Execution
- In a small pan, toast all the dry spices until fragrant. Grind the spice mixture into a fine powder using a spice grinder or mortar and pestle.

- Pour the spice mixture into a small bowl and mix it well with grated orange zest and salt.
- Combine chicken, pork fat, spice mixture, and apricots in a large bowl, mixing thoroughly with your hands.

- Keep the bowl in the fridge for about 1 hour. Then grind the meat mixture into a bowl that has been kept cold in the freezer.
- Add the chilled wine to the ground meat mixture and use a thick, sturdy spoon to mix the mixture thoroughly until smooth and uniformly blended (about one minute).

- Cook a small portion of the sausage to taste, then adjust the seasoning if necessary.
- After the intestines have been flattened into thin sheets, use a pump to inflate them, then tie both ends tightly together (this makes it easier to stuff the meat in). You can let the intestines sit in the sun for a while, creating a crispy and chewy sausage casing similar to those in stores.
- Place the ground meat mixture into a pastry bag, gently squeeze it into the casings, use your hands to compress and smooth the sausages evenly.

- Check and prick air holes in the sausage casings once the filling is evenly packed. Twist the sausage links into 15cm-long pieces (or desired length). Place the sausage links on a plate or tray, cover tightly, and refrigerate for a few hours or overnight to let the flavors meld.
Pro Tip: You can store these homemade sausages in the refrigerator for 2 to 3 days or up to 2 months in the freezer.
