How to make crispy rice fish:

- Rinse the rice fish thoroughly and let it drain on a sieve.
- Marinate the fish with about a small spoonful of salt for 1 to 2 hours.
- Mix two tablespoons of honey, two tablespoons of fish sauce, a bit of chili powder. Season to taste with a balance of sweetness and saltiness.

- Coat the fish evenly with cornstarch in a sieve.

- Heat up the oil (enough to fully submerge the fish), coat the fish and fry until golden brown.

- Once the fish turns golden brown, remove and drain excess oil by placing them on a wire rack.

Reduce the amount of cooking oil in the pan, then add garlic and spring onions to sauté until fragrant, quickly pour a bowl of honey in, add a bit of cold water. Bring to a boil until the mixture thickens slightly.

Next, add the fish, stir evenly to coat the fish with the honey mixture and dry, then turn off the heat. Scoop onto a plate and serve hot with rice.
