1. Coconut Braised Pork
Here's what you'll need to whip up some flavorful coconut braised pork:
– Pork Belly (Pork Meat): 500 grams
– 5 Chicken or Duck Eggs
– Fresh Coconut: 1 piece
– Filtered Water: 50 milliliters
– Sugar: 100 grams
– Seasonings: Fish sauce, minced garlic, crushed chili, seasoning powder, dried shallots, chili
– Utensils: Clay pot or cast iron pot

Preparing Pork Belly
– Rinse the pork belly with diluted saltwater, then cut into square pieces.
– Clean and finely chop the dried shallots.
– Marinate the meat with a mixture of: 1.5 tablespoons fish sauce, finely chopped dried shallots, 2 teaspoons seasoning powder, 1/2 tablespoon sugar, 1 chopped chili for about 15 minutes to let the meat absorb the seasoning.

– Clean and boil chicken eggs, then peel off the shells. (You can lightly fry them).
Making caramel syrup (also known as bitter candy in the North)
Heat a pan on the stove until dry, pour 3 tablespoons of white sugar into the pan. Stir evenly, simmer on low heat, when the syrup reaches a dark brown color, it's ready (If the sugar burns too much, add a little water), resulting in caramel syrup mixture
Proceed with braising the meat
– Put the marinated meat and fried eggs into the pot, braise with 150ml water. When the meat boils, add 1/2 cup of fresh coconut water to the pot. Simmer over low heat (Be careful not to add too much coconut water as it can cause greasiness and soapy taste).
– Once the meat broth is boiling and thickened, add 1/2 tablespoon of caramel syrup to the pot and simmer for about an hour.
– After about an hour, add another 1/2 cup of coconut water to the pot. Continue simmering over low heat until most of the liquid in the pot has evaporated, then turn off the heat. Serve on a plate and enjoy while still warm.
Some people like to lightly fry the eggs before braising, this way the eggs will have a thin, crispy outer layer that absorbs flavors faster, but the inside may not be as flavorful. If you don't fry them, you should braise the eggs for a little longer, maybe braising them multiple times, to ensure they absorb the seasoning well.
