2. Detailed steps for making pickled bean sprouts
Step 1: Prepare the bean sprouts
Whether you buy bean sprouts or grow them yourself, remove any damaged stems, peel off the outer layers, and trim the ends. Then, rinse gently to avoid breaking the sprouts, and drain in a colander to remove excess water.

Rinse the bean sprouts thoroughly and blanch with filtered water
Step 2: Prepare the carrot
- Peel and wash the carrots.
- You can julienne them quickly or cut them into flower shapes for aesthetic appeal (remember to slice thinly for even seasoning absorption like bean sprouts).

Step 3: Prepare the chives and shallots
- When making Southern-style pickled bean sprouts, use chives: Trim the roots, discard wilted leaves, wash thoroughly, and cut into sections. Peel and wash the shallots, slice thinly.
- Similarly for Northern-style pickled bean sprouts: Prepare the spring onions, discard wilted leaves, trim the roots, wash thoroughly, drain, and cut into sections.

Step 4: Mix the ingredients
- Combine the bean sprouts, chives (or spring onions), and carrots together and mix well.
- Be gentle while mixing to avoid breaking, which could result in unattractive final product, and excessive crushing may cause the chives to become bitter after pickling.

Step 5: Prepare the pickling brine for bean sprouts
Prepare the pickling brine for bean sprouts by boiling and cooling about 2 liters of water, adding 2 tablespoons of coarse salt, 1 tablespoon of sugar, and a splash of vinegar. Adjust the saltiness to be slightly saltier than soup broth, then add thinly sliced shallots and optionally chopped chili for heat. Pour the brine into a clean, dry glass jar.

Step 6: Pickle the bean sprouts
- Place the mixture of bean sprouts, carrots, and chives into the prepared glass jar containing the pickling brine, ensuring the mixture is fully submerged in the brine.
- Then, cover the jar tightly. In sunny weather like today, it only takes about a day for the bean sprouts to pickle. When serving, take them out and enjoy with a dipping sauce made of fish sauce, lime, and chili.
