Recipe for making sumptuous chicken cartilage and mushroom hotpot for a cozy dinner
Ingredients:
- 400g chicken cartilage
- 4 cloves of garlic
– Various types of mushrooms: straw mushrooms, abalone mushrooms, shiitake mushrooms,...
– 2 tomatoes
– 1 onion
– ½ pomelo
– Spring onions, cilantro
– 2 pieces of young tofu
– Condiments: cooking oil, chili sauce, soy sauce, salt, seasoning powder, sugar, MSG,...
Preparation:
– Clean and chop the chicken cartilage into square pieces, parboil briefly, then drain. Save the chicken cartilage broth for hotpot broth.

– Tomatoes, onions: cut into long wedge shapes.
– Minced garlic.
– Lemongrass divided into two parts: one minced, one cut into square pieces.
- Prepare some fresh coriander leaves and cut them into 2-3cm pieces.
How to cook chicken cartilage and mushroom hotpot:
- Sauté minced garlic, tomatoes, onions, and finely chopped coriander stems until the tomatoes release a beautiful red color. Then add the chicken cartilage and simmer for 5 minutes.
- Once the hotpot starts boiling, season with 2 tablespoons of fish sauce, 2 tablespoons of chili paste, 1 tablespoon of seasoning powder, 2 tablespoons of sugar, 1 tablespoon of MSG, and 1 tablespoon of soy sauce.
- When the hotpot reaches a second boil, add straw mushrooms, coriander leaves, and chopped spring onions, and simmer for 2 minutes to enhance the sweetness.

You can either add all the chicken cartilage and mushrooms at once to boil and serve, or gradually add each type for varied tastes. Chicken cartilage and mushroom hotpot pairs well with fresh noodles, instant noodles, or dried vermicelli.
