How to Make Pad Thai:
Step 1:
- Clean the shrimp, cut off the heads, peel the shells, leaving the tail shells intact for presentation. Marinate the shrimp with 1 teaspoon salt, ½ teaspoon pepper.
- Cut tofu into pieces, then fry until golden. Then cut into small, thin slices.

- Rinse bean sprouts and chives thoroughly, then drain. Cut chives into small pieces.
- Peel and clean fresh tamarind, then boil until cooked. Then mash to extract the juice.
- Roast peanuts until golden brown, then grind into powder.
Step 2:
- Heat cooking oil in a pan, stir-fry shrimp until they turn red, then add bean sprouts and chives.
- Make the sauce with the following ratio: 2 tablespoons fresh tamarind juice, 1 tablespoon good fish sauce, 1 tablespoon honey, 1 tablespoon chili sauce.
- Then add the rice noodles, pour the sauce mixture over the mixture. Stir well and turn off the heat.

Step 3:
- Beat the eggs to blend the yolks with the whites, add ½ teaspoon fish sauce.
- Heat a non-stick pan over medium heat, add cooking oil, spread evenly over the pan. Then pour the eggs in, spread thinly and evenly. Cover with a lid until the eggs are cooked through, then turn off the heat. Place the rice noodles in the middle, fold all four corners.

- Place the wrapped rice noodles with fried egg on a large plate, use a knife to cut through the center of the egg. Sprinkle crushed peanuts on top. Serve hot with chili powder and lime juice (if desired).
