- Silken tofu: 4 pieces
- Salted duck eggs: 2 eggs
- 1 stalk of spring onion
- Seasonings: cooking oil, seasoning powder, MSG
Method for Making Salted Egg Tofu:

- Clean the salted duck eggs, boil until fully cooked, then remove and soak in cold water to cool down. Peel and extract the egg yolks into a bowl, then mash thoroughly with a spoon.
Note: Boiling time for salted duck eggs is usually longer than regular eggs due to their harder texture.
- Wash and finely chop the spring onions, separating the white part.

- Rinse the fresh tofu and drain. Cut into bite-sized squares. Heat cooking oil in a pan, then fry the tofu until golden brown on all sides. Transfer to a plate.

- Remove excess oil from the pan, leaving about 1 tablespoon. Sauté the white part of the spring onions until fragrant, then add the mashed salted egg yolks. Add about 2 tablespoons of boiling water, a bit of seasoning powder, and MSG into the pan. Use chopsticks to mix well. Adjust seasoning according to taste.
- Return the fried tofu to the pan and toss evenly for about 3 minutes until the salted egg sauce coats the tofu pieces evenly.

- Finally, turn off the heat, sprinkle the chopped spring onions on top, mix well, and arrange the tofu on a plate. Now we have a delicious salted egg tofu dish that is both fragrant and unique.
