Bamboo filtered coffee, also known as coffee stew, has its roots in the Chinese community in Saigon since ancient times. Unlike the drip coffee, bamboo filtered coffee is brewed in a fabric filter and stewed using a special pot.
Making vợt coffee is a simple yet crucial process. Coffee grounds are placed in a fabric filter and soaked in boiling water to extract the essence. Then, the coffee is poured into special mugs, heated over a crackling fire. This step ensures the coffee stays hot, thereby preserving its rich, flavorful, and aromatic qualities.

Currently, there are 2 cafes in Saigon that still uphold the tradition of brewing vợt coffee, catering to locals and tourists alike, evoking nostalgia for old Saigon through a cup of coffee.
