How to make German-style braised pork knuckle:
Step 1:

- Clean and peel the carrots, cut them into bite-sized pieces
- Clean the potatoes, peel and cut them into chunks, then soak in water to prevent discoloration
- Clean the shallots, cut them into approximately 5cm pieces
- Peel and clean the garlic, finely chop it
- Peel and clean the onion, wash it, and slice it into wedges
- Clean the bay leaves, let them drain
Step 2:

Clean the pork knuckle, then cut it into bite-sized squares. You can blanch it in boiling water. After that, marinate the pork knuckle with seasoning powder, black pepper, and minced garlic for 30 minutes to let the flavors infuse.
Step 3:

Place the pot on the stove, then add the pork knuckle, shallots, onion, bay leaves, a bit of fresh milk, red wine, and bone broth. Simmer over low heat for about 1 hour. Once the pork knuckle is tender, add potatoes and carrots to simmer until cooked, then turn off the heat.
If you have a pressure cooker, use it to speed up the tenderizing process of the pork knuckle.
Step 4: Prepare the sauce

Heat the pan, melt some butter, and infuse it with crushed garlic. Add flour and stir until smooth, then pour in fresh milk, cream, and a bowl of reduced bone broth. Season with a pinch of pepper. Simmer the sauce until it boils, then taste and adjust as needed. Now, you can make a bit more sauce to enjoy with some delicious bread.
Finished Product:

Simply plate the simmered shank with potatoes and carrots, then drizzle the sauce over it. You'll have a delightful German-style braised shank, rich in flavor. When you savor it, you'll notice the creamy taste of the sauce, the tender meat, and the enticing aroma.

If you prefer larger cuts, you can leave the shank whole without chopping it. However, ensure you have a large pot with high capacity for quicker tenderness. German-style braised shank is commonly found in beer houses, but making it at home is not only cost-effective but also ensures a delicious taste comparable to any restaurant!
