How to Make Vegetarian Stir-Fried Pho Noodles:
Prepare the Ingredients
- Briefly blanch the pho noodles in hot water with a dash of cooking oil.
- Clean the tofu, then cut into bite-sized pieces.
- Peel and julienne the carrots. Wash the water spinach and let it drain.
- Wash the chives and cut them into small 2-3cm sections.
- Soak and clean the shiitake mushrooms, removing the stems. Wash the onion and slice into bite-sized pieces.

Preparing Vegetarian Stir-Fried Pho Noodles
- Heat a skillet, add oil, and fry garlic until golden. Once the garlic is evenly browned, add the pho noodles to stir-fry until they firm up, then set aside on a separate plate.
- In the same pan, heat more oil and add more garlic. Then mix in shiitake mushrooms, bok choy, carrots, onions, and fried tofu. Season to taste. Reintroduce the stir-fried pho noodles to the mix, stirring well. Add chives at the end and turn off the stove.
- To serve, plate the vegetarian stir-fried pho noodles, sprinkle a bit of pepper and garnish with carved carrots (if available) for an appealing presentation.
