Fresh Lotus Seeds: 200g (if fresh lotus seeds are unavailable, substitute with 100g dried lotus seeds)
Straw Mushrooms: 100g
Shiitake Mushrooms: 15 pieces
Golden Oyster Mushrooms: 100g
Young Tofu: 150g
Carrot: 1 piece
Winged Beans: 100g
Spring Onions, Coriander: 50g
Red Horn Peppers: 3 pieces
Garlic: 1 bulb
Dried Shallots: 1
Seasoning: bouillon cubes, MSG, ground pepper, chili powder, cooking oil, salt

How to Cook Delicious Mushroom and Lotus Seed Soup:
Step 1: Prepare the Ingredients

- Lotus Seeds: Boil in water with a pinch of salt to remove any bitterness, once cooked, drain well.
- Straw Mushrooms, Golden Oyster Mushrooms: Soak in rice water for 30 minutes to whiten. If rice water is unavailable, separate the mushrooms, discard the stems, wash thoroughly, then drain.
- Soak Shiitake mushrooms in warm water for 30 minutes until bloomed, remove stems, and rinse thoroughly.

- Cut young tofu into bite-sized pieces.
- Peel, wash, trim, and thinly slice carrots.

- Wash and clean winged beans, remove tough fibers on both sides, and cut into approximately 3cm segments.
- Wash and finely chop spring onions and coriander, slice the bulb of the spring onion into quarters before chopping, cut coriander into chunks.
- Red horn peppers: remove stems, wash thoroughly, slice, and mix with 3 tablespoons of pure fish sauce or 3 tablespoons of soy sauce to serve alongside the mushroom and lotus seed soup for added flavor.
- Clean and finely chop dried shallots and garlic.
Step 2: Cooking the Mushroom and Lotus Seed Soup
- Heat 1 tablespoon of cooking oil with finely chopped garlic and shallots and 1 tablespoon of chili powder. Then add enough water to make the soup, bring to a boil, season with ½ teaspoon of salt, 1 tablespoon of bouillon cubes, and ½ teaspoon of MSG to taste.

- Add blanched lotus seeds and carrots, then after 5 minutes add winged beans, straw mushrooms, shiitake mushrooms, and golden oyster mushrooms. Bring to a boil, skim off any foam on the surface for a clearer broth. Finally, add diced young tofu, adjust seasoning to taste, add ½ teaspoon of ground pepper and finely chopped spring onions, then turn off the heat.
