– 50g squid rings
– 50g pork heart
– 50g pork liver
– 150g bok choy
– 1/2 carrot
– 100g straw mushrooms
– 1/2 onion
– 30g water spinach
– 2 tablespoons oyster sauce
– 2 tablespoons soy sauce
– 1 tablespoon sesame oil
– 1 tablespoon cornstarch
– 300 ml cooking oil
– 20g minced garlic
– 20g minced shallots
– A pinch of chili and cilantro for garnish

How to Cook Crispy Stir-Fried Noodles
Step 1:
Heat cooking oil in a pan, wait for it to become hot, then fry the noodles until they puff up. Once fried, remove and place on a plate lined with absorbent paper to soak up excess oil.
When frying, make sure the oil is very hot and the noodles are submerged; otherwise, they won't puff up properly and may become brittle.
Step 2:
The sauce mixture consists of 2 tablespoons soy sauce, 1 tablespoon sesame oil, and 2 tablespoons oyster sauce. Mix well.
Step 3:
Add 5 tablespoons of cooking oil to the pan, wait until the oil is hot, then add minced garlic and minced shallots. Sauté until both ingredients turn golden and fragrant.
Step 4:
Add sliced pork heart and pork liver, sauté briefly to firm them up. Then add shrimp and squid, continue to stir-fry evenly.
Prepare pork heart by washing with salt and white wine to remove odor. To reduce toxins in pork liver, soak it in unsweetened fresh milk for about 15 minutes. Peel shrimp, leaving the tails, and remove the back vein. Clean the squid, cut into square pieces, score the surface for a more appealing appearance when cooked.
Step 5:
Add carrots, onions, and a little water to the cooked ingredients, stir-fry for 2 minutes. When the onions become slightly translucent, add straw mushrooms, continue to stir-fry for another 2 minutes.
Clean the straw mushrooms and soak them in salted water for 15 minutes to eliminate any unpleasant odor.
Step 6:
Next, add bok choy to the mixture. When the bok choy is crisp-tender, pour in the prepared sauce mixture, stir well to let the ingredients absorb the flavors.
Step 7:
Continue by adding cherry tomatoes (1 tomato cut into 8 pieces), 1 tablespoon diluted cornstarch (mixed with 2 tablespoons water) for thickness. Finally, add chopped chives, mix well, and remove from heat.
Place the tomatoes at the end to ensure the dish remains less watery as tomatoes tend to release water. Remember to enjoy the dish while it's hot to fully appreciate its rich flavor. And don't forget to drizzle the sauce over the noodles just before eating to prevent them from getting soggy if poured too early.
