Step 1: Prepare bananas and jackfruit
Peel bananas, remove any fibers, then slice them lengthwise into thin slices. Each banana can be cut into 3 – 4 slices.
Remove seeds and fibers from jackfruit, cut it into bite-sized pieces.
Step 2: Cook the milk mixture
Pour 400 ml coconut water into a pot, add 150ml condensed milk, 50g sugar, and 220ml sweetened fresh milk. Then, heat the mixture over low heat, stirring gently in one direction for about 5 – 7 minutes. Once all the ingredients are dissolved, turn off the heat, and let it cool for 5 minutes.
Step 3: Blend jackfruit with bananas
Put 1 banana, 3 jackfruit segments, and 2 cups of sweetened yogurt into a blender, blend until smooth for about 2 – 3 minutes.

Ripe bananas: 3 pieces
Coconut milk: 300 ml (canned)
Fresh unsweetened milk: 150 ml
Condensed milk: 50 ml
Peanuts (groundnuts): 50 grams
Shredded coconut or dried coconut flakes: 50 grams
Cornstarch: 15 grams
Sugar: 15 grams
Vanilla powder: 5 grams
How to Make Coconut Banana Ice Cream
Step 1: Roasting Peanuts
Heat a pan over the stove. Once hot, add 50g of peanuts and 1/2 teaspoon of salt to the pan. Roast over low heat, stirring constantly to prevent burning. Roast until the peanuts shed their skins and turn slightly golden brown. Turn off the heat and let cool.
Then, peel off the peanut skins and lightly crush them without breaking them into small pieces.
