Ingredients:

- Pork 200g (preferably pork loin or hip for making spring rolls)
- Pork skin about 150g
- Rice vermicelli: 200g (you can buy or make it yourself)
- Fresh sung leaves, fresh banana leaves
- Seasonings: salt, MSG, pepper, fish sauce, chili sauce
- Limes: 3 pieces
- Garlic: 4 bulbs
How to Make Phung Spring Rolls:

Clean the meat, separate the skin, lean meat, and fat. Cut them into thin slices (the thinner, the better). Then, boil a pot of water and blanch the slices quickly (about 30 seconds), remove, and chop finely like dice. Mix with the right amount of salt and fish sauce.

Scrape the pork skin clean, wash it thoroughly, squeeze lemon juice and salt into it, and knead it well with the pork to eliminate any unpleasant smell. Then, put the skin and fat into a pot of water, add a teaspoon of salt, boil until cooked, then remove and soak in cold water to make the skin white and crispy.
Next, slice the skin into long, thin strips, and cut the fat into small pearl-like pieces. (Note: Slice the skin very thinly to ensure the best crispiness and taste.)

Proceed by peeling the garlic, crushing it, and finely chopping it.
For the pork skin, thinly slice the pork loin and fat into an bowl. Add the chopped garlic and mix well, letting it marinate for about 10 minutes. Then, add 1/2 teaspoon of salt, 1 teaspoon of fish sauce, 1 teaspoon of pepper, and 1 teaspoon of MSG. Mix thoroughly and let it sit for 5 minutes to allow the spices to dissolve and permeate into the meat, skin, and fat.

Finally, add the rice vermicelli and mix well until the mixture becomes cohesive.
Clean banana leaves and sung leaves thoroughly, let them dry. Wipe the banana and sung leaves dry to remove all moisture.

Spread banana leaves, add a layer of sung leaves on top, then tightly wrap the entire mixture. Whether you prefer large or small rolls, it's up to you. However, wrap them first with young sung leaves, then wrap with fresh banana leaves on the outside, securing them with strings to form the 'nem' shape. Use flat bamboo strips, dyed red for an appealing touch to the 'nem'.
After wrapping, leave it in a cool place for about 1 day for the spring rolls to firm up and become ready for consumption.
