Delve into the nostalgia of childhood snacks, where shake-shake donuts hold cherished memories. Crafting these delightful little pastries by hand is a joyous endeavor. Let Mytour unveil the simple method for making shake-shake donuts.
1. Introduction to Shake-Shake Donuts
Shake-shake donuts, also known as sesame balls or glutinous rice donuts, are round treats about the size of a fist. Made from glutinous rice flour, coated with a layer of sesame seeds on the outside, and filled with mung bean paste inside. They are named shake-shake donuts because when you hold them, you can feel the filling rolling inside the dough. This is a snack that almost every child adores.

2. Preparation Stage
Ingredients
- Glutinous rice flour: 125g
- Skinned mung beans: 200g
- White sesame seeds: 70g
- Sugar: 70g
- Cooking oil: 300ml
- Vanilla extract: 8g
- Salt: ½ teaspoon

Utensils
- Bowl, pot, pan, food wrap, measuring scale, blender...
3. How to make shake-shake donuts
Step 1: Filling
- Clean 200g skinned mung beans, then put them in 500ml water with ½ teaspoon salt. Stir well until the salt dissolves and cook over high heat until the water evaporates.
- Once the water has evaporated, continue cooking over low heat until the beans are soft.
- Next, put the cooked mung beans into a blender, add 40g sugar, and continue blending until the beans become smooth. Note: If you don't have a blender, you can use a spoon or mortar to manually mash them.

- After grinding the mung beans, mix them well with 5 teaspoons cooking oil. Then fry in a non-stick pan over low heat. Remember to stir constantly to prevent burning.
- Fry until the beans form a cohesive mass and no longer stick to the pan, then add 8g vanilla extract, mix well until the filling becomes elastic.
- Then transfer the filling to a bowl, wrap it tightly with plastic wrap. Note: Wrap the filling tightly to prevent moisture buildup.
- Let the filling cool down for a while, then divide it into equal portions and shape them into balls.

Step 2: Dough
- Mix 125g glutinous rice flour and 30g sugar in a bowl until combined
- Dissolve a small amount of salt in 90ml hot water at 60°C. Then pour the mixture into the flour and mix well.
- Knead until the dough is smooth. The dough should be smooth, not sticky, and not dry. Note: Add water slowly; if the dough is too dry, add more water, if it's too sticky, add more flour. Add water gradually until the dough reaches the desired smoothness.
- Finally, cover the dough tightly with a lid or plastic wrap for 20 minutes.

Step 3: Shaping the Donuts
- Divide the rested dough into equal portions (according to the size you desire). Work with one portion at a time, keep the rest covered to prevent drying.
- Flatten the dough and place the filling in the center. Fold the edges tightly and shape into balls. An important tip for making shake-shake donuts: Ensure the dough wraps tightly around the filling to prevent bursting during frying.

- Prepare 70g white sesame seeds in a bowl. Dip the shaped donuts into a bowl of water, then roll them evenly in sesame seeds.
- Next, use dry hands to press and shape the donuts, ensuring the sesame seeds adhere well to the dough.

Step 4: Frying the Donuts
- Finally, in the process of making shake-shake donuts, the frying step is crucial. Heat oil in a pan, ensuring there's enough to submerge the donuts. Once the oil is hot and bubbling, begin frying the donuts.
- Avoid frying too many donuts at once, as they may stick together when they expand.
- Fry over medium heat and continuously flip the donuts to ensure they expand and brown evenly.
- Fry until the donuts are puffed up and evenly golden brown.

4. Notes on the Finished Product
The ideal donut should have a uniform golden color after frying, a fragrant sesame aroma, a puffed texture, and remain firm when cooled. When broken, the filling should not stick to the dough. The crust should be crispy, revealing a tender mung bean filling.
