Ingredients for making garlic-infused stir-fried greens(Serves 4)
- Sweet cabbage or Chinese cabbage: 350g
- Garlic: 5 cloves
- Seasonings: salt, sugar, pepper, broth powder, cooking oil
How to make garlic-infused stir-fried greens
Step 1: Prepare the ingredients
- Pick fresh greens, discard wilted leaves, remove roots, soak in diluted saltwater for about 10 minutes.
- Remove the greens, rinse with cold water, drain, and cut into bite-sized pieces (about 3-4 cm).
- Peel and wash the garlic, then lightly crush.

Step 2: Sauté the greens
- Bring water to a boil with 1/2 teaspoon of salt, blanch the greens briefly.
- Quickly remove the greens and immerse them in a bowl of cold water to retain their crispiness, then drain well.
- Heat a pan with 1 tablespoon of cooking oil, add the garlic and sauté until fragrant.
- Add the greens to the pan with garlic, then add 2 teaspoons of broth powder, 1/2 teaspoon of sugar, and season to taste.

- Sauté the greens until just cooked, sprinkle with a bit of pepper, then turn off the heat. Transfer the greens to a plate and serve hot with rice.
Note:
- Choose greens that are just right, not too young nor too old as they will be easier to sauté. Young greens can easily become mushy when sautéed, while older greens can be tough.
- To reduce splattering, heat the oil until it's very hot before sautéing the garlic.
- Stir-frying the greens over high heat helps them cook quickly and release less water.
