Ingredients for Steamed Pork with Ginger:

- Pork belly: 300g
- Fresh ginger: 1 medium-sized knob
- Vietnamese coriander: 1 bunch
- Chive blossoms: 2 sprigs
- Bird's eye chili: ½ fruit
- Seasonings: sugar, salt, pepper, vinegar
- White wine
How to Make Steamed Pork with Ginger:
Step 1:
- Rinse the pork belly with cold water, rub with a handful of coarse salt and 1 tablespoon of vinegar or lemon juice, then rinse again until clean.
- Peel and wash the ginger, then slice into matchsticks. Trim the roots and wilted leaves off the chive blossoms, then finely chop.
- Vietnamese coriander: Remove tough stems, wash thoroughly, and halve. Finely chop half and set aside in a separate bowl, leave the other half intact.
- Bird's eye chili: Wash and finely chop.

Step 2:
- Bring water to a boil, add ginger, 1 tablespoon of white wine, and 1 teaspoon of salt, stir well, then briefly blanch the pork.
- Take out the pork belly, place it in a bowl of ice water for about 3 minutes to cool slightly, then remove and slice into bite-sized pieces.

Step 3:
- Transfer the pork belly to a large bowl, mix with 1 teaspoon of salt, ½ teaspoon of sugar, ½ teaspoon of ground pepper, 1 teaspoon of fish sauce, chopped chili peppers, and chopped scallions, then marinate for 20 minutes.
- Finally, steam the pork belly for 7 - 10 minutes until cooked through, then arrange on a serving plate, garnish with Vietnamese coriander, and serve with mint leaves...
