Ingredients for preparing Singaporean chili crab
- 1 kilogram of fresh crab from the sea
- 1 beaten chicken egg
- 100 milliliters of tomato sauce
- 50 milliliters of chili sauce
- 3 tablespoons finely minced ginger
- 2 tablespoons finely minced garlic
- 4 small horn peppers finely minced
- 2 tablespoons white wine
- 2 tablespoons cornstarch
- Seasonings: salt, pepper, cooking oil.
2. How to make Singaporean Chili Crab
Step 1: Prepare the ingredients
- Soak the crab in water to let it release dirt, then use a sharp object like scissors to puncture the hollow part of the crab until it loses its resilience. Proceed to remove the crab's ties, wash it thoroughly, drain the water, and then flip it to remove the apron, separating the crab's apron for later.

- Depending on the size of the crab, cut it into halves or quarters for easier consumption and spice absorption. Separate the larger claws, then crack the crab shell slightly to enhance spice penetration.
- Mix cornstarch with 20ml of cold water, stirring until the mixture becomes smooth and creamy.
Step 2: Proceed to make Singaporean Chili Crab
- Heat the wok, pour 100ml of cooking oil, bring it to a boil, excluding the crab claws. Fry the crab body until it turns crispy and beautifully golden, then remove and place it on a plate lined with absorbent paper.
- Still using the same oil in the frying pan, sauté ginger and garlic until fragrant. Add chili, tomato paste, and chili paste. Stir in 1 teaspoon of salt and ½ teaspoon of pepper, along with sugar and wine.

- Once the mixture in the pan is boiling, add the fried crab to it. Stir quickly to ensure the crab cooks evenly and absorbs the flavorful sauce. Pour about ½ cup of water into the pan and add the crab claws. Stir gently, cover the pan.

- After cooking for about 3 minutes, uncover the pan. Take a bowl of cornstarch mixed with water, stir it again, and slowly pour it into the pan. Cook until the liquid in the pan boils again. Add the beaten eggs, stir well, season to taste, then turn off the heat and remove the pan.
3. Completion
- Plate the crab, then evenly pour the sauce over it. Enjoy it hot with either fried buns or bread - both are incredibly delicious choices.
