Chicken congee is a familiar dish loved by many. Not only is it rich in nutrients, but it also perfectly suits the taste buds of a wide range of people, making it suitable for both breakfast and dinner.
Switch up your evening meal with a flavorful and tender chicken congee
Ingredients:
– 2 chicken thighs
– ½ cup glutinous rice
– 1 carrot, peeled and sliced
– 50g shiitake mushrooms
– Scallions, cilantro, ginger
– Seasonings: fish sauce, sugar, salt, seasoning powder, pepper, etc.
Ingredient Preparation:
– Peel and crush fresh ginger, finely chop scallions and cilantro.
– Rinse glutinous rice and soak for approximately 1 hour, then drain.
– Wash chicken thighs with salt water and place them in a large pot, cover with water. Add crushed ginger to the pot, boil the chicken for about 30 minutes, then remove the chicken and keep the broth for congee.
– Once the chicken cools, separate the meat and bones. Shred the chicken meat into bite-sized pieces.
– Dice carrots and shiitake mushrooms.
How to cook chicken congee:
– Pour the soaked rice into the chicken broth, cook the rice for at least 30 minutes until it's tender, soft, and sticky.
Note: When the congee pot boils, reduce the heat to prevent it from overflowing. Occasionally stir the pot with chopsticks to prevent sticking, add water if the congee becomes too thick.
– Next, add shredded chicken, carrots, shiitake mushrooms, ½ tablespoon seasoning powder, 1 tablespoon fish sauce, and ½ teaspoon sugar. Continue cooking for about 10 more minutes to complete.
Scoop the congee into a bowl, add scallions, a sprinkle of black pepper, and enjoy. With this congee cooking method, you'll have a delicious chicken congee with tender and sweet chicken, slightly sweet carrots, fragrant shiitake mushrooms, and a hint of pepper creating an enticing flavor for the eater.
