According to the restaurant owner, the key to the dish's success lies in the seasoning of the duck-braising broth, which includes about five types of Chinese herbs and bone stock. The duck is briefly fried before being cooked in this mixture until soft. Recently, responding to a preference for crispy duck, the restaurant has introduced a version where the braised duck is refried to golden perfection to meet customer's tastes.
Hai Ky distinguishes itself from other duck noodle shops with its noodles. The shop produces its own noodles using a traditional family recipe, notably using less alkaline water, resulting in noodles that offer a chewy texture and the rich flavor of eggs.
