Prepare the Ingredients
- Beef Tendons: 500g (preferably choose brisket tendons, Y tendons)
- Mai Quế Lộ Wine / White Wine: 1 tablespoon
- Fresh Ginger: 1 piece
- Cinnamon: 3 sticks
- Star Anise: 3 pieces
- Char Siu Sauce: 3 tablespoons
- 5-6 large garlic cloves
- Fish Sauce: 2 tablespoons
- Palm Sugar: 3 tablespoons
- Salt: 1/2 teaspoon
- White Vinegar: 1 teaspoon
- Cashew Color: 1 tablespoon
- Vegetable Oil: 2 tablespoons

Processing Steps
Step 1: Preparing Beef Tendons
- Mix ground ginger + 1 tablespoon of wine + 1 tablespoon of water. Use the mixture to massage the beef tendons, then rinse thoroughly with water.
- Place the beef tendons in a pressure cooker + 1 sliced ginger + 1 teaspoon of salt + 1 tablespoon of Mai Quế Lộ wine / white wine + cinnamon + star anise + 500ml of water (cover the tendons). Simmer for 30 minutes.
- Remove the beef tendons to cool and cut into bite-sized pieces.

Step 2: Marinating Garlic-infused Beef Tendons
- Crush garlic cloves without peeling
- Place garlic + beef tendons + char siu sauce + vegetable oil + cashew color + fish sauce + palm sugar + salt + vinegar in a bowl. Mix well and refrigerate overnight to marinate the tendons.

- Wrap aluminum foil on a baking tray, place the garlic-infused beef tendons on the tray
- Bake at 180 degrees for 20-30 minutes until done
