Ingredients for Chicken Curry:
(Serving 4)
- 900g chicken meat
- 600g potatoes, 200g carrots
- 2 cloves of garlic, 2 lemongrass stalks, 3 bay leaves
- 100ml coconut milk
- 750ml boiled chicken broth, 750ml water
- 2 teaspoons salt, 2 teaspoons sugar, 2 teaspoons garlic powder, 2 teaspoons curry powder, 1 tablespoon cornstarch (available at grocery stores, supermarkets)
How to make Chicken Curry:
Step 1
- Clean the chicken meat, cut into bite-sized pieces. Add seasoning: salt, garlic powder, curry powder to the chicken, marinate for 3 hours.

- Peel and clean the garlic, finely chop. Clean the lemongrass, smash, cut into 5cm pieces, tie tightly with cloth (type that can be boiled in water).
- Wash and peel the potatoes, carrots, cut into bite-sized pieces, then fry briefly in a pan. When the potatoes and carrots turn slightly golden, they're ready.

Step 2
- Heat oil in a pan, fry the marinated chicken until it turns golden brown, then remove and drain excess oil.

- Sauté the garlic until fragrant, then add the chicken and stir-fry, add curry powder, salt, and sugar, stir well. When the chicken absorbs the seasonings, pour in the water and prepared chicken broth to simmer, add lemongrass and bay leaves to the pot.
- Keep the heat high, bring the water to a boil then reduce the heat. Simmer over low heat for 5 minutes, until the chicken starts to soften, then add the potatoes and carrots to simmer together.
Step 3
- When the potatoes and carrots are tender, add coconut milk and a little cornstarch to the pot, stir well, bring to a boil then turn off the heat. Season with sugar and salt to taste. Once finished, the dish exudes the aroma of curry, lemongrass, with a hint of coconut milk, golden and tender chicken, soft yet not mushy potatoes and carrots, all coated in a rich and flavorful sauce, meeting the standards. This dish is best enjoyed with rice or bread.

Note:
- Choose native chicken for tender and not mushy cooked chicken meat.
- You can also use sweet potatoes in addition to potatoes and carrots to enhance the sweetness of the dish. If you prefer it spicier, you can add fresh chili to the curry pot.
- Tying lemongrass stalks into bundles will prevent them from getting mixed with the chicken and vegetables.
When serving, simply remove the lemongrass bundles and it's done.
- It's advisable to add fresh milk with a ratio of 2 parts coconut milk to 1 part fresh milk when cooking, as fresh milk adds richness to the dish without being too heavy and is good for health.
