Ingredients: (for 5 people)
- pork belly: 1 kg
- fish sauce: 3 spoons
- black pepper: 2 spoons
- sesame oil: 1 spoon
- sugar: 2 spoons
- shallots: 1 bulb
- garlic: 3 cloves
- white part of spring onions: 2 bulbs
- cilantro: 3 sprigs
- coconut cream: 700 ml
Instructions:
Step 1: Rinse the pork belly under cold water with a pinch of salt, use a knife to scrape off the skin to remove any dirt. Then rinse thoroughly with clean cold water and cut into large, thick slices.

Step 2: Crush garlic, pepper, shallots, spring onion white part, and cilantro together in a mortar until smooth. Then mix well with the meat and other ingredients (except for fresh coconut cream). Let it marinate for 20 - 30 minutes to absorb the seasoning.

Step 3: Heat a pan on the stove, add 1 tablespoon of oil, sauté some shallots until fragrant. Then add the meat and fry both sides until firm (about 7 minutes). Next, pour in fresh coconut water, cover with a lid, and simmer over low heat until the sauce thickens, coats the meat pieces with a golden crust, then turn off the heat. Occasionally turn the meat over to ensure even cooking.


Step 4: When the meat is cooked, slice the meat simmered in fresh coconut water into pieces, arrange on a plate, garnish with lettuce and decorative cucumber flowers if desired.


Step 5: This dish can be rolled with lettuce and dipped in sweet and sour fish sauce or served hot with rice, both delicious.
