Ingredients for making minced meat porridge:
(Serving for 4 people)
- 100g glutinous rice
- 100g jasmine rice
- Pork belly: 100g
- Dried shiitake mushrooms: 4.5 pieces
- Lettuce: 1 small head
- Chive blossoms: 1 small bunch. Dry onions: 1 bulb
- Ginger: 1 small bulb
- Herbs: mint, basil, coriander... (depending on taste preference)
- Seasonings: salt, pepper, cooking oil
Note:
- Using both glutinous rice and jasmine rice to cook porridge will make it more fragrant and smoother. If you don't like glutinous rice, you can use only jasmine rice.
- Using pork belly with both lean meat and fat will make your porridge richer compared to using only lean meat.
How to make minced meat porridge:
Step 1:
- Wash the rice thoroughly, soak in water for 30 minutes.
- Soak dried shiitake mushrooms in warm water (50-70 degrees Celsius) for 20 minutes, then drain and rinse with cold water until clean. Cut into small pieces and drain.
- Clean the meat, finely chop or grind, marinate with finely chopped dry onions, ½ teaspoon of salt, and 1/3 teaspoon of pepper for 20 minutes.
- Remove the core of the lettuce, rinse well, and chop finely.
- Trim the roots of chive blossoms, rinse well, and cut into 1 cm pieces. Peel and wash the ginger, then slice.

Step 2:
- Pour rice into the pot, add water 3.4 times the amount of rice, add 1 teaspoon of salt, 1 teaspoon of cooking oil, then switch to Cook mode. When boiling, switch to Warm mode and let it simmer until the porridge is soft (2-3 hours of simmering produces the best porridge).

- Sauté minced meat and mushrooms in a hot oil pan until cooked, then add them to the cooked porridge pot. Stir gently or add minced meat and mushrooms directly to the simmering porridge pot, switch back to Cook mode, stir well, cover, and cook again. When the porridge boils for 2 minutes, switch back to Warm mode.
- When serving, add chive blossoms, ginger, ½ teaspoon of pepper, stir well, season to taste, then ladle the porridge into a bowl and serve hot with lettuce and fresh herbs.
Pro Tip:
- To check if the porridge is cooked, you can use a spoon to stir the porridge. If the porridge is sticky, the rice grains have expanded 2 to 3 times, soft and easily broken or divided into 2 to 3 parts, then the porridge is ready and delicious.
- You can use cold rice to cook porridge, which shortens the cooking time to 1 - 1.5 hours.
- To adjust the thickness or thinness of the porridge, you only need to increase or decrease the amount of water used for cooking, but be careful not to reduce it too much as it may make the porridge dry or run out of water during the simmering process.
- If cooking porridge for breakfast, it's best to soak the rice and cook the porridge the night before. At mealtime, simply stir-fry the meat and mushrooms and add them to the porridge for an additional 5 minutes. Overnight porridge tastes even better and this method is convenient for busy individuals.
