Tamarind crab is a wonderful dish for the summer. A bit sour, a bit spicy, especially the sweet taste of crab makes everyone want to keep eating.
I'll share the secret to cooking fragrant and delicious tamarind crab with you all.
Ingredients needed:
- Fresh crab meat: 2 crabs
- Ripe sour tamarind: ½ cup
- Garlic: 4 cloves, finely chopped
- Tapioca starch: 1 tablespoon
- Other spices: sugar, pepper, chili, seasoning powder…
How to cook:
Step 1: Prepare the crab
The crab needs to be cleaned thoroughly. You can use a clean brush to scrub the outside of the crab shell. Remove the crab's shell and place the crab meat in a bowl.
For better flavor absorption, you can cut the crab into 2 or 4 pieces. Alternatively, you can leave it whole if you prefer.
The hard shell of the crab claws should be lightly crushed to enhance flavor absorption and prevent bursting during cooking.
Place all the crab pieces in a large bowl and marinate with seasoning powder, a little pepper. Mix well and let it marinate for about 30 minutes.
After the crab has marinated, heat a pan and fry the crab until evenly golden. Remove and drain excess oil.
Step 2: Sauté the crab with tamarind sauce
First, put tamarind in a bowl of hot water, use a spoon to stir until dissolved. Use a strainer to extract about ¾ of the bowl of water (remember to remove the tamarind seeds).
Heat a pan, when the pan is hot, add oil and sauté the finely chopped garlic. Then add the tamarind water to the pan and add sugar, 2 tablespoons of seasoning powder, stir well.

Continue to cook until the tamarind water boils, then add finely chopped fresh chili. Depending on your spicy preference, you can add a little or a lot as you like.
Mix tapioca starch with a bowl of water, then slowly pour it into the sauce on the pan, stirring continuously to avoid lumps. Cook for about 2-3 minutes and season with spices to taste.
Add the crab and stir-fry for about 5-7 minutes, remember to keep the heat low.

Step 3: Presenting the tamarind crab
After finishing, arrange the crab on a plate, pour the remaining sauce over it and sprinkle crab roe on top. Then enjoy it while it's still hot.
