Sour soup is a beloved dish in Vietnamese cuisine, yet not everyone knows the art of preparing it perfectly.

Ingredients Needed:
Pink goby fish: 1 fish weighing approximately 500 grams
Pineapple, tomato, morning glory, bean sprouts, corn, spring onions, red onions, chili, water spinach, tamarind.
Seasonings: fish sauce, salt, sugar, MSG, bouillon powder
Method:
Step 1: Prepare the fish and vegetables. After draining the fish, pan-fry both sides until golden brown. This enhances the flavor of the fish and prevents it from falling apart when cooking the soup.
Step 2: Place the tamarind in a bowl, add warm water, and stir until it dissolves.
- Place a pot on the stove, add a little cooking oil, sauté chopped red onions until fragrant, then add chopped tomatoes and season lightly to soften them quickly.
- Then, add the pineapple to the soup. When it boils again, add the fish and cook until the fish is completely cooked, then remove the fish and set aside.
- Add corn, morning glory to the broth and simmer for about 3 minutes, then add bean sprouts and continue to boil. When the soup boils, add the fish back into the pot, sprinkle with spring onions and water spinach, and turn off the heat.
Step 3: Finished Product
You can serve sour soup with pink goby fish with noodles or white rice, both are delicious options. If you prefer stronger flavors, you can prepare a ginger fish sauce dip to accompany it.
To ensure a visually appealing soup:
- The first method to achieve an attractive soup is to cook only what you need for each meal. Cook for lunch if you're having lunch, and for dinner if you're having dinner. You can divide the broth into two portions and keep the vegetables separate. Cook one portion before lunchtime and the other before dinner. This way, the soup will be hot and visually appealing.
- When cooking vegetables, do not cover the pot as it may result in dull-colored vegetables.
- Let the vegetables with longer cooking times go in first, followed by those that cook faster. For example, add hardy greens first, then corn, and wait for them to cook before adding delicate greens like morning glory. When adding morning glory, quickly stir and add bean sprouts, stir once lightly, then turn off the heat. After turning off the heat, add water spinach. This ensures the vegetables are cooked just right and retain their vibrant colors!
