How to cook seafood porridge:
Step 1: Prepare the ingredients
- Mix together glutinous rice and jasmine rice, rinse thoroughly, then soak in water for 2 – 3 hours to allow the rice to swell. Cooking the rice will be faster and more delicious (if making rice porridge for breakfast, you can soak the rice overnight).
- Peel and finely chop the purple onion and ginger. Remove the roots and wilted leaves from the spring onions, rinse thoroughly, and finely slice.
- Soak the mushrooms in water for 30 minutes, then trim the stems, rinse off any dirt, and cut into 2 or 3 pieces.

To save time, you can opt for pre-prepped shrimp and squid or have the seller clean them for you. When cooking, simply rinse them thoroughly and marinate.
Step 2: Simmer the porridge
Discard the water used to soak the rice, rinse the rice again, then transfer it to a pot. Add water, three times the amount of rice. Bring to a boil over high heat, then reduce to low and simmer for about 30 minutes. Check out how to cook porridge using a rice cooker here.

Rinse the corn kernels, boil until tender, then drain.
Once the porridge is almost tender and the rice grains begin to soften, add the mushrooms and simmer for 5 minutes over low heat.
Next, add the shrimp, squid, corn, finely chopped ginger, and a pinch of salt to the pot. Gently stir, cover with a lid, and simmer. Once the shrimp and squid are cooked through, add spring onions and a teaspoon of sesame oil, stir well, and turn off the heat.
Step 3: Enjoy
Serve the porridge in bowls, sprinkle a dash of black pepper on top, and enjoy with various greens such as coriander, basil, etc. Best enjoyed hot.
If you crave spicy food, you can enhance the porridge by adding chopped chili, chili sauce...

And there you have it, the seafood porridge is now complete. Smooth and fragrant, each spoonful bursts with the rich flavors of shrimp, squid, tender corn, and the distinct aroma of mushrooms. A single taste will linger in your memory forever. Not only delicious, but this seafood porridge also packs a punch of nutrients, proteins, and vitamins, providing ample energy for a busy day. Remember to save the recipe and give it a try soon! Wishing you success.
