- Chicken bones: 1 – 2 sets (buy pre-filtered bones at supermarkets, large markets)
- Celery: 1 small handful
- Carrots, onions, corn: each type 1 – piece/ear
- Purple onions: 2 bulbs
- Vinegar: 1 tablespoon
- Salt

- To save money, you can use bones from dishes you've already prepared. For example, when making boiled or roasted chicken, set aside the meat for eating and keep the bones for making broth. You can also use corn cobs instead of whole corn kernels for the broth.
How to make broth:
Step 1:
- Rinse the chicken bones thoroughly and drain them.
- Peel the carrots, leaving them whole. Trim the roots of the celery, pick off wilted leaves, and rinse well.
- Peel the onions, wash, and cut them in half.
- Peel and wash the corn, cut into 3 pieces.
- Wash the purple onions, grill over the stove for about 2 - 3 minutes until fragrant.

Step 2:

- After 1 hour, gently remove the vegetables to prevent them from becoming mushy and clouding the broth.

- Add 2 teaspoons of salt, simmer for another 2 - 3 hours, then turn off the heat. Allow the broth to cool, pour it into glass jars or plastic containers, and place it in the refrigerator to solidify. After about 1 hour, remove the solidified fat from the top, cover, and store in the refrigerator.
Note:
- The broth can be used for up to 4 days if stored in the refrigerator. If you want to make a large batch to use over several months, you can divide the broth into small portions and freeze them. Simply thaw and use as needed.
- The simmering time for the bones can vary depending on your conditions, but if simmering in a regular pot, it should be at least 2 hours for a flavorful broth. If using a pressure cooker, the simmering time will be reduced to about 1 hour.
- If you use pork bones, it's best to blanch the bones first, then discard the water and add fresh water and vegetables to simmer. This will result in a clear and odorless broth.
- Avoid using MSG as it can diminish the clarity of the broth. If your broth becomes cloudy, you can use clean cloth or a fine sieve to strain out impurities.

When chilled, chicken broth becomes thick and somewhat gelatinous, resembling jelly.
