Ingredients for making paddle-surfing tofu:
(Serving for 4)
- Soy milk: 1 liter
- Cornstarch: 50g
- Chicken eggs: 5 eggs
- Cooking oil, seasonings, garlic, chili
How to make paddle-surfing tofu:
Step 1:
- Pour soy milk into a stainless steel mold, add cornstarch, and stir well.
- Beat the egg yolks and mix with a pinch of seasoning: salt and bouillon powder until the spices dissolve.

Step 2
- Pour the egg yolk mixture into the mold containing soy milk, mix well, and steam over boiling water for 30 minutes.
Step 3:
- After boiling the beans, take the cooked beans out, cut them into small pieces.
- Heat the oil in a pan, then fry the beans until golden brown.

- Remove the beans and place them on paper towels to absorb excess oil, then arrange them on a plate and garnish with some fresh herbs.
- Peel the garlic, crush it, and finely chop the chili. Put garlic and chili in a bowl of fish sauce, add a little water to make dipping sauce. Add sugar, lime, and more chili if desired.

While boiling, remember to stir consistently to prevent the soy milk from sticking.
- When beating the chicken eggs, remember to beat in one direction only, avoiding circular motions to prevent the mixture from becoming lumpy.
