Grilling pork is not difficult, but ensuring it stays moist, flavorful, and tender is a skill not everyone possesses. Here are some tips that I've discovered through experimentation, guaranteed to make your grilled pork as succulent and tasty as restaurant-quality.
When it comes to grilled pork, there are two main cuts: pork chops and ribs. While they share similarities, they have distinct characteristics. Pork chops tend to dry out easily due to their lean meat, whereas ribs are more tender and juicy when cooked. Personally, I prefer ribs grilled over charcoal for that perfect smoky flavor.
The Aroma of Grilled Pork Fills the Kitchen
In my opinion, the combination of spices and marinating time determines whether grilled pork turns out delicious or not. Typically, people think marinating for 30 to 60 minutes is sufficient. However, if you want the spices to fully penetrate the meat, it needs at least 6 to 8 hours to produce flavorful pork.
Marinating Grilled Pork with Condensed Milk
For a marination recipe using condensed milk for grilled pork, try this: for 1kg of pork ribs, mix 3 cloves of minced garlic, 1 tablespoon of sugar, 2 tablespoons of condensed milk, a small bottle of oyster sauce, 1 teaspoon of seasoning powder, and 2 tablespoons of fish sauce.
Marinating Grilled Pork with Fresh Milk
For fresh milk, use unsweetened milk to marinate the pork for grilling. Marinate the pork in a ziplock bag or container with unsweetened fresh milk, soak for about 6 hours before grilling, or you can also leave it overnight. Then discard the milk, marinate the pork with your preferred spices, ensuring the flavors penetrate the meat before grilling to ensure tender and moist grilled pork.

Achieving Delicious and Tender Grilled Pork by Brining Before Grilling
Blanch the meat briefly in hot water with a little salt added, cook the meat until it's about 80 to 90% done. You can remove any scum and use the broth for soups or other dishes. After blanching, marinate the meat with your favorite spices. This method will enhance the flavor of grilled pork and won't take too much time to grill.
Marinating Grilled Pork with Condensed Milk and Soda Water
Using a marinade of condensed milk and soda water will yield surprisingly delightful results. Marinate 1kg of pork ribs with 3g salt, 100g sugar, 100g good fish sauce, 2 tablespoons honey, 1 tablespoon condensed milk, 3g MSG, and 2 tablespoons soda water (or substitute with Coca-Cola if unavailable). Add 1 tablespoon of star anise liqueur, 2 cloves of garlic, 3 shallots, and mix well with the meat for about 15 minutes. Add 2 tablespoons of chicken fat to prevent the pork from sticking to the grill. Finally, top with thinly sliced lemon, and refrigerate overnight.

Marinate Grilled Pork with Oyster Sauce and Sesame Oil
The recipe for marinating grilled pork with oyster sauce and sesame oil is one I've only read about, but seeing a friend succeed with it, I want to share it with everyone. Marinate the ribs with fish sauce, soy sauce, shallots, oyster sauce, sesame oil, and sugar. When grilling, brush the meat with a mixture of honey and cooking oil to prevent it from drying out. If selling, marinate the pork with Coca-Cola and sugar instead of honey, and it'll still come out beautifully. If you don't have honey at home, add a few slices of lemon when marinating to keep the meat tender and delicious!
Marinate Grilled Pork with Coconut Milk and Baking Soda
This marination method for grilled pork requires 1kg of pork ribs, 50g shallots, 50g garlic (finely minced and squeezed for juice), 2 tablespoons condensed milk, 2 tablespoons honey, 2 tablespoons oyster sauce, ½ tablespoon sesame oil, 2 tablespoons cooking oil, 1 teaspoon pepper, 2 tablespoons fish sauce, 3 tablespoons sugar, 2 tablespoons seasoning powder, 1 tablespoon MSG, ½ cup coconut water, and ½ teaspoon baking soda.
Marinating grilled pork as described above will result in golden, flavorful, and tender meat. Coconut water and soda powder in the marinade will make the meat very tender.
Grilled pork marinated with coconut water will enhance the flavor and make the pork even more tender.
Grilled pork tastes even better with the double grilling technique.
Grilling the ribs twice will make them tender, and it's best not to marinate with salt as it will harden the ribs. The marinade for double grilling includes shallots, garlic, fish sauce, aromatic liquor, honey, and cooking oil. Double grilling means grilling once and then putting the ribs back in the marinade. Just before serving, grill a second time at a higher temperature to ensure the pork is thoroughly cooked and has an attractive color.
Remember not to marinate pork with salt, as it will make the meat tough after grilling.
Note: If you have time to prepare, use animal fat like clarified chicken fat instead of vegetable oil or lard to marinate ribs, it's the secret weapon of a famous rice plate eatery.
