Secrets to making flavorful shrimp-paste pork, with long-lasting preservation – cook once, eat for the whole week
Ingredients:
– 240g ground pork
– 40g shrimp paste
– Purple onions, garlic, lemongrass, galangal, fresh chili
– Spices: cooking oil, sugar, broth powder, food coloring...
Preparation of ingredients:
– Grind galangal, garlic, and lemongrass into a smooth paste. Dice the chili finely.
– Marinate the meat for 30 minutes with half of the ground galangal, garlic, and lemongrass. Add a teaspoon of food coloring for a beautiful yellow color when the shrimp-paste pork dish is finished.
– Mix shrimp paste with 3 tablespoons of boiling water, stir well, and strain to remove impurities.

How to prepare shrimp-paste pork:
– Heat cooking oil in a pan, sauté half of the mixture of galangal, garlic, and lemongrass until fragrant. Then, quickly stir-fry the marinated minced meat.

– As the meat firms up, add the strained shrimp paste water to the pan over low heat. Enhance the richness with additional spices: 1 tablespoon fish sauce, 1 teaspoon sugar, finely chopped chili. Stir thoroughly until the meat turns golden and slightly crispy at the edges.
– Once the meat has a glossy golden-brown color, add 1 teaspoon of broth powder, mix well, and turn off the heat. The shrimp-paste pork dish is now beautifully golden, blending the aroma of galangal, lemongrass, and the fragrant scent of shrimp paste.
