Step 3: Rolling the Beef Filling
Once the beef is marinated with spices, you can flatten it out and place a mixture of sautéed vegetables and smoked pork in the center.
Roll the beef tightly into a cylindrical shape. At this step, make sure to tie the meat securely with kitchen twine. Avoid overstuffing the beef to prevent it from becoming loose or too little filling, which may cause the final product to shrink unevenly.
Evenly spread the mixture of mustard seeds, thyme leaves, rosemary leaves, salt, and pepper on the surface of the rolled beef.
