Step 2: Wash each strawberry under running water. In the second water, soak in diluted salt water for about 5 minutes, then rinse again with clean water, drain the strawberries, and remove the green stems.
Step 3: Layer strawberries and sugar alternately, then shake gently to let the sugar seep into each strawberry. The amount of sugar can be more or less than 700g depending on your preference for the jam, whether sour, sweet, or very sweet. Do not use a spoon or chopsticks to mix the strawberries, as this will crush them. Leave this mixture in a cool place for 4 - 5 hours or longer, until the sugar water melts and blends together.

Step 4: Put the mixture in a pot, turn the heat to low, and only simmer when the mixture is boiling. Occasionally shake the pot to evenly soak the strawberries and sugar, do not cover with a lid and stir.
This is a step that requires very high patience. Simmer the mixture over low heat for 5-8 minutes, then turn off the stove, remove the pot, and let the mixture cool. After about 4 - 5 hours, you repeat the process: bring to a boil - let simmer for 5 - 8 minutes, then let cool again. Repeat this process about 4 - 6 times, until you see the mixture thicken again. At that time, the Dalat jam is complete.
Rose Jam Dalat
Rose jam Dalat is not made from rose petals but is made from red Hibiscus flowers, also known as Roselle. This is a herbaceous plant with many health benefits originating from Europe. As one of the unique jams in Dalat, rose jam has a refreshing, slightly sour, sweet taste in a crunchy and attractive state. Here's how to make rose jam:

Ingredients needed: 1kg red Hibiscus flowers, 800g white sugar, 1 glass jar
Step 1: Choose Hibiscus flowers with large petals that are not crushed, wash them clean, separate the petals and the stamen using a knife or a specialized tool. The stamen can be dried and used to make a cooling tea for daily consumption.
Step 2: Drain the petals and place them in a glass jar; layer the petals, sugar, petals until all are used. Allow to ferment for 3 - 5 days for the sugar and petals to seep in.
Step 3: Finally, take out the petals separately, place them in a pan over low heat, turn them over evenly to prevent burning until the petals shrink slightly, taste them to be refreshing and crunchy. After cooling, you will have a delicious jar of Dalat jam to store in the refrigerator for gradual consumption.
