As far as I know, there are 2 main differences between these 2 modes, Shutdown and Sleep.
Firstly, it's about startup time. When you put your machine in Sleep mode, it restarts very quickly, just a few seconds and the computer is ready for you to use. Additionally, because all tasks are saved in RAM, you can resume work immediately from where you left off.

Additionally, you need to save all your work and data before shutting down, or else you'll lose everything.
