1. Green Tea Mochi
Ingredients:

- 1100g of sugar
- 1 liter of water
- 600g of toasted glutinous rice flour
- 3 tablespoons of cooking oil
- 5 tablespoons of matcha powder
- Dusting powder
- 300g of peeled split mung beans
- 2 tablespoons of cooking oil
Instructions:
Step 1: Rinse mung beans and soak until soft. Then steam them.

Step 2: After steaming, blend the mung beans with a bit of water, 100g of sugar, 2 tablespoons of matcha powder, and cooking oil. Cook the mixture until it thickens, let it cool, and then shape into even balls.

Step 3: Combine water and the remaining sugar in a pot and bring to a boil over low heat. Turn off the stove once it boils. When the sugar water cools down slightly, add matcha powder and stir until dissolved.
Step 4: Sift the flour to ensure it's smooth, then gradually add the sugar water mixture to the flour, stirring well. Knead by hand until the dough is heavy, smooth, and non-sticky.

Step 5: Divide the dough into small portions, roll each out into a thin circle, place a pre-formed round filling in the center, and wrap it securely.

Roll the mochi in dusting flour, then press into molds to shape. Your delicious mochi is now ready.

2. Unique Chilled Mochi

Ingredients:
- 130g toasted glutinous rice flour
- 160g powdered sugar
- Water
- Vanilla
- 1 tablespoon of shortening (vegetable fat for fluffiness)
- Food coloring as desired
- Choose any filling you like: mung bean, red bean, mixed fillings, etc.
Method:
Step 1: Sift glutinous rice flour and sugar into a mixing bowl. Add shortening and mix with the flour-sugar mixture until it becomes crumbly and well-incorporated.

Step 2: Gradually add water to the flour mixture and knead until the dough is smooth and no longer sticks to your hands, forming a cohesive and smooth mass.

Step 3: Mix food coloring with 130g of water, add vanilla. Then, blend with the dough mixture and knead until the color is evenly distributed. Wrap the dough and refrigerate for about 30 minutes.

Step 4: Divide the filling into equal portions and shape into small balls.

Step 5: Dust a clean surface with a little flour. Divide the chilled dough into small pieces, roll each out into a thin circle, place a ball of filling in the center, and wrap it securely.
