In essence, Nha Trang grilled pork rolls don't differ much in ingredients from other regions, but the unique rolling technique and the special dipping sauce truly define the unmistakable taste of this delectable dish. Let's learn how to make grilled pork rolls below!
Ingredients:
- 600g finely ground sirloin, or use shoulder meat
- 100g fat
- Seasoning for the meat: 3 tablespoons fish sauce, 1 small spoon of salt, 3 tablespoons sugar, 1/2 small spoon baking powder, 1 small spoon pepper, 2 tablespoons tapioca flour, 2 small spoons sesame oil, and dried shallots.
- Dipping sauce: 150g shrimp, 150g minced sirloin, 100g pork liver, 1/2 cup glutinous rice, 1/2 cup soybean paste, or hoisin sauce, salt, sugar, sesame oil, dried shallots, and fish sauce.
- Accompanying greens: aromatic herbs, cilantro, laksa leaves, cucumber, and optionally sour starfruit or green banana.
- Rice vermicelli, rice paper rolls, chili peppers, golden roasted peanuts, and crushed rice crackers.
- Bamboo sticks for grilling the meat.
Instructions:
Step 1: Clean and finely dice the fat.

Step 2: Place the meat in a bowl, add the fat and the seasoned meat mixture to the meat bowl, finely chop the dried shallots, mix well, and use a large spoon to knead until the meat mixture is firm. Wrap tightly and refrigerate overnight.

Step 3: Grease your hands with cooking oil, take a small amount of the meat mixture, evenly wrap it around bamboo sticks, grill over charcoal until golden brown, or use an electric grill. If using an oven, bake at 160°C, for 10 - 15 minutes per side, brushing a little oil mixture on the surface to prevent the meat from drying out.

Step 4: Rinse glutinous rice several times until water is clear. Soak the rice in cold water overnight or for about 5 hours. Then, cook the rice with a cup of filtered water until soft. Transfer the rice to a bowl and use a spoon to mash it.

Step 5: Peel and devein the shrimp, crush the peanuts. Grind the minced sirloin into a bowl. Clean the pork liver and finely chop.

Step 6: Heat three small spoons of sesame oil, sauté the dried shallots until fragrant, then add the shrimp to stir-fry. Stir-fry for about 3 to 5 minutes.

Step 7: Then add the minced meat and pork liver, stir-fry until cooked. Pour the mixture into a blender or meat grinder, grind finely once again.

Step 8: Slowly pour the soy sauce into the pan, stirring with chopsticks while pouring. Season with sugar, salt, and fish sauce to taste, adjust according to your preference.

Step 9: Simmer for 10 to 20 minutes until the mixture thickens, then turn off the heat. Scoop the dipping sauce into a small bowl, add crushed peanuts, and optionally, chili peppers or spicy chili sauce.

Step 10: Wash lettuce, aromatic herbs, and cilantro thoroughly.

Step 11: Wash cucumber, remove seeds, and cut into bite-sized pieces.

Step 12: When serving, arrange the grilled meat on a plate, add vermicelli, lettuce, and various accompanying greens. Roll it up with rice paper and dip it in the prepared dipping sauce.
