Prepare the ingredients
- 1kg beef
- 100g pork fat
- 3 teaspoons potato starch or cornstarch
- 1 teaspoon baking powder
- Half a bulb of garlic, 2 shallots, 1 piece of ginger
- Cooking oil
- Ice cubes
- 1 tablespoon oyster sauce
- Basic spices such as ground pepper, salt, fish sauce, sugar, MSG, bouillon powder

Execution Steps
Step 1: After purchasing beef, wash it thoroughly with diluted salt water, then cut it into small pieces. Similarly, clean the pork fat and slice it thinly lengthwise. Mix the pork fat with the beef and mince finely for easy grinding.

Step 2: Crush the ice cubes and place them in the refrigerator to prevent melting. Peel and wash the garlic and shallots, then finely chop them. Put the potato starch and baking powder in a bowl and mix well, set aside.

Step 4: Add 1 tablespoon of crushed ice, 1/3 of the mixture of potato starch and baking powder, 1 teaspoon of cooking oil to the ground meat, then continue grinding to mix the ingredients evenly. Proceed to grind the remaining portions of meat in the same manner.
Step 5: After grinding, the meat will form a smooth paste. Put each portion of meat into nylon bags and seal tightly, then place them in the freezer compartment for about 1 to 2 hours. After sufficient time in the freezer, remove the meat. Put the meat in the grinder, add chopped onions and garlic, then grind each portion at high speed for 1 minute until smooth.

Step 6: Place a pot on the stove, add 1.5 liters of filtered water, 1 piece of crushed ginger, 1 tablespoon of bouillon powder, and bring to a boil. Put on disposable gloves and rub cooking oil on both hands to prevent sticking. Use a spoon to scoop the meat mixture into your palm, gently shape it into round balls between your thumb and forefinger. Use the spoon to slide the rounded meat into the boiling water. Work quickly until all the meat mixture is used up to ensure even cooking.

Step 7: Boil the meatballs over high heat for about 10 minutes until cooked. Remove them and place them in a bowl of ice water to keep them tender and prevent discoloration.
