Tarts in general, and apple tarts specifically, are renowned sweet treats from France. Crafting an apple tart may pose a challenge for baking novices, but the end result is undeniably worth it! With its gentle tartness, fragrant apple aroma, and crisp, buttery crust, this dessert is a true delight. Below is the recipe shared by Mytour for you to try.
Introduction to Apple Tart
Apple tarts are often mistaken for apple pies, and many people think they are the same. However, they are distinct despite sharing similar ingredients. Apple pie originated from the Apple Tart in Europe, introduced by the English to America, where it evolved into the deeply traditional American apple pie.

You can easily distinguish between these two types of pastries based on the following characteristics:
- Apple Pie typically features a lattice crust on top, enclosing the filling with a flaky, sweet pastry crust, which is sweeter than a tart.
- Tarts, on the other hand, have a relatively thin crust, and the filling is often exposed on the outer edges. The tart crust resembles shortbread – firm, crisp, but not flaky, with the addition of egg in the pastry dough. Additionally, the tart base often carries a subtle salty taste from the added salt.

Creating the Apple Tart Crust
Sift flour and sugar into a large bowl, add salt and mix well. Prepare a small bowl, add ice water, egg, and a few drops of lemon juice, then stir well.
Use an electric mixer to evenly mix the sugar-flour mixture. Then add cold butter, turn on the mixer to medium speed, and rotate 10 to 12 times until the butter pieces become smaller (not fully dissolved). At this point, you'll see a crumbly mixture forming.

Make a hole in the center of the flour mixture and add the egg. Use a spoon (to prevent sticking) to continue mixing until smooth and elastic. Note: If the mixture is crumbly, add a drop of water to make the dough softer.
Shape the dough into a round or flat round shape. Wrap it in cling film and refrigerate for about 30 minutes to 1 hour.

Creating the Apple Filling
While waiting for the dough to rest, wash the apples, cut them in half, remove the core, then cut them into square pieces.
Place a pot on the stove and melt the butter. Then add the apples, sugar, lemon juice, dried cranberries, rum, and cinnamon. Mix well. Simmer over low heat for about 20 minutes until the apples release their juices and become tender. Once the apples are cooked, turn off the heat and let cool.

When the dough has rested long enough, take it out. Sprinkle some flour on a clean surface, place the dough on it, and roll it out thinly to about 3mm – 5mm thick, with a diameter larger than 25cm to leave some extra edge.

Prepare the mold, grease with a thin layer of butter, and dust with flour (to prevent sticking). Place the dough into the mold and trim off the excess edges, using a fork to prick the base of the tart. Spoon the apple filling into the tart.

Topping Preparation
For the topping, thinly slice the apples (2mm) – or you can use a mandoline for uniformity. Arrange the apple slices on the tart surface vertically and fan them out.

When sliced, you'll notice the apple filling remains moist. The apple tart boasts a harmonious blend of sweet and tangy flavors, complemented by the fragrant notes of cinnamon, butter, eggs, and rum.
