To craft the renowned Gò Công sponge cake, follow these steps:
Begin by preparing a slightly larger-than-normal mold for shaping the cake batter when frying.

Combine corn flour, rice flour, and eggs thoroughly, then gradually add coconut milk while stirring until the mixture is smooth. Next, mix in finely chopped spring onions and 1 teaspoon of salt, then let the batter rest for about 30 minutes.

Cut pork liver into bite-sized pieces, season with 1 teaspoon of salt, 1/2 teaspoon of ground pepper, and 1 teaspoon of minced garlic, then mix well. Allow it to marinate for 15 minutes.
Once the pork liver has absorbed the seasonings, quickly stir-fry over high heat until the liquid evaporates and the liver is cooked through.

Finely chop beef tenderloin, season with 1 teaspoon of salt, 1/2 teaspoon of ground pepper, and 1 teaspoon of minced garlic, then mix well. Let it marinate for 15 minutes, then stir-fry until the beef is medium rare.

Clean the shrimp, you can peel or leave the shell on, then drain. Also, rinse and boil the peanuts until cooked. Select whole green beans, no need to peel, and steam until tender.

Clean the bean sprouts and drain.
Heat oil in a frying pan, as only one item is fried at a time and it needs to be submerged in oil, a large pan is not necessary. You can use a deep pan or a pot, just add a bit more oil. Fry until the oil is hot.

First, place some bean sprouts into a mold, then add some pieces of liver and minced meat on top. This filling should fill about 2/3 of the mold. Then fill the mold with batter, sprinkle some peanuts and green beans on top, finally add 1-2 shrimp on the surface.

Place the cake molds in the hot oil. As the cakes turn golden, they will naturally separate from the molds.
Once the cakes are golden brown, remove and place them on absorbent paper.

The cakes are best enjoyed hot. They can be eaten plain or wrapped with lettuce and herbs, then dipped in sweet and sour fish sauce for extra flavor.
