STEPS TO MAKE CHICKEN SALAD WITH LIME
Step 1. Prepare the ingredients
Cut chicken into large pieces.
Slice ginger, crush garlic, and finely chop.
Thinly slice the lime.
Finely chop scallions, cilantro, and chili peppers.

Step 2. Boil the chicken
Add 6 to 7 cups of water to a boil with 3 slices of ginger and 1 stalk of whole scallion.
Add the chicken, bring the water back to a boil. Turn off the heat immediately, cover tightly, and let the chicken sit in the pot for 10 - 12 minutes (depending on the size of your chicken pieces).

Once the chicken is cooked, transfer it to a bowl of ice water to halt the cooking process. Remove the chicken from the water, shred it into bite-sized pieces, and transfer to a mixing bowl.
