- Step 1: Prepare the Ingredients
When buying eel from the market, ensure it's cleaned and cut into bite-sized pieces. Then, simply rinse it with lime juice or warm water to remove the sliminess. Rinse again with clean water and drain.
Clean pork bone marrow thoroughly and let it dry.
Slice banana flowers thinly, soak in diluted saltwater in a large basin to prevent browning, then drain.
Wash tomatoes thoroughly, cut them in half or into quarters.
Peel pineapples, remove pineapple eyes, then cut into bite-sized pieces.
Prepare the sour star fruits by cutting off the stems, peeling, washing thoroughly, halving, and lightly crushing to release the tangy flavor.
Clean and finely chop the shallots.
Dice the fresh chili peppers.
Wash the side vegetables thoroughly and let them drain.
Soak the rice vermicelli in hot water to reduce the sourness.
