Step 1: Prepare ingredients for making shrimp paste
- After purchasing shrimp, trim off the shrimp's whiskers, head, and legs. Remove the black thread on the back and wash them thoroughly with diluted saltwater. Let them drain.
- After rinsing, put the shrimp in the freezer compartment for 30 minutes. This process helps the shrimp grind finer and fluffier. Once slightly frozen, transfer them to the refrigerator's chilled compartment.
- Use a blender to finely grind the shrimp meat, then transfer it to a separate bowl.
- Peel and crush dried onions, then finely chop them. Clean and wash green onions, then cut them into small pieces.
- Peel and clean the carrot, wash it thoroughly, and cut it into small pomegranate-sized pieces. Finely chop it.

- Combine ground shrimp and minced meat in a clean bowl. Add finely chopped dried onions, minced carrots, finely chopped green onions, 2 teaspoons of seasoning, 1/2 teaspoon of fish sauce, 1 teaspoon of sugar, 1 teaspoon of black pepper. Mix the shrimp and meat mixture thoroughly with the spices. Add 4 tablespoons of flour and mix well again. Let the mixture rest for 20 minutes to marinate.
