Preparing Pandan Leaves
Clean the pandan leaves thoroughly, then select the freshest ones and place them in a basket to take to cook. Put a pot on the stove, add about 400ml of water to the pot, turn on high heat, and wait for the water in the pot to boil before adding the pandan leaves.
Reduce the heat to low and cook for about 10 - 15 minutes until the water in the pot turns purple, then add 200ml of filtered water to the pot. Continue cooking for about 10 - 15 minutes over medium heat until the water in the pot boils, then turn off the heat. Use a strainer to filter out the pandan leaf water.
2. Soaking the Glutinous Rice
Soak the cleaned glutinous rice in water, then drain. Pour 600ml of pandan leaf water into a bowl, add the drained rice, mix well, and soak for about 2 hours for the pandan leaf water to penetrate the rice grains.
