- 10g elastic jelly powder.
- 200g white sugar.
- Filtered water.
- 50ml sugar syrup.
- Half a lime.
- Cooking oil.
- Cooking pot, gas stove, salt, strainer, bowl, chopsticks, 1 clean plastic bottle similar to a ketchup bottle, glass jar with lid, …
Execution Method:
- Step 1: Mix Jelly Powder
Take a bowl and sequentially add 3g crispy jelly powder, 10g elastic jelly powder, 200g white sugar, then mix well with chopsticks.
- Step 2: Cook Jelly
Pour 1 liter of filtered water into a pot, add the jelly powder mixture, stir well with salt, and let it soak for 30 minutes. Then, place the jelly water pot on a gas stove, bring to a medium heat, and continuously stir with salt to prevent sticking to the bottom of the pot.
When the jelly water boils, continue cooking for about 3 - 5 minutes until the jelly thickens. Then, turn off the gas stove.
- Step 3: Making White Jelly
Prepare a large bowl of cold water and add a little cooking oil with squeezed lime juice.
Then, use a spoon to scoop the jelly into a clean plastic bottle similar to a ketchup bottle, then cover the lid and drop jelly into the bowl of cold water with oil. Repeat this process until all jelly is made in the pot.
Next, scoop out the white pearls from the bowl of cold water, drain the oil, and rinse thoroughly.
Next, pour the jelly pearls into another bowl, add 50ml sugar syrup, and squeeze lime juice into it. Mix well.
Ingredients:
- 200g tapioca flour.
- 12g tapioca powder.
- 30g white sugar.
- ⅓ teaspoon lime juice.
- Filtered water.
- Cooking pot, stove, bowl, chopsticks, strainer, spoon, cutting board, ...
Execution Method:
- Step 1: Mix and Knead Dough
Boil water using a high-speed kettle, about 1.5 liters.
Next, add in sequence: 200g tapioca flour + 12g tapioca powder + 30g white sugar into the same bowl, then mix well with a spoon.
Next, evenly sprinkle ⅓ teaspoon of lime juice into the flour bowl.
Then, when the water has been boiled using the high-speed kettle, slowly pour in 150ml of boiled water into the flour bowl and mix well with a spoon.
When the dough in the bowl has cooled down, knead the dough with both hands until it becomes smooth and elastic, forming a cube without sticking to your hands.
Note: If the kneaded dough still feels too wet, add more tapioca flour to knead.
Then, divide the dough into 4 equal parts and shape them into long cylinders with a diameter of about 0.5 cm.
Then use a knife to cut them into small pieces as desired, then roll them into round balls. While kneading the tapioca balls, sprinkle some tapioca flour on the newly kneaded balls to prevent them from sticking together.
After you have finished kneading the tapioca balls, sift all the tapioca flour-covered balls through a strainer to remove excess flour.
Prepare a bowl of cold water, then use a strainer to scoop the white tapioca balls from the pot and soak them in the cold water bowl for about 2 - 5 minutes. Next, use a strainer to scoop the sugar-coated tapioca balls into another bowl.
Finally, add 2 tablespoons of sugar to the cooked tapioca balls and mix well.
