- After acquiring fresh live eel, rinse it thoroughly with water and gently stir with chopsticks to remove all dirt. Rinse multiple times to ensure cleanliness, then let it drain.
- Clean the orange zest and finely chop it.
- Betel leaves, green onions: clean, wash with water, and finely chop.
- Dill, ginger leaves: clean, wash, and finely chop.
